  • 2 eggs
  • 1/2 cup sugar
  • 1/3 cup corn oil
  • 2 3/4 cups all-purpose flour
  • 1 packet baking powder
  • 1 tsp ground cinnamon
  • 1 lemon zest (grated)
  • lemon juice

How to Make Soft Apple Cookies

  • 1. Chop the apples into pieces and put them in a bowl with the juice of a squeezed lemon and a sprinkle of cinnamon. This way they won’t darken and will immediately have a delicious aroma.
    2. In another bowl, break the eggs and lightly beat them with the hand whisk. Add the corn oil, grated lemon zest, ground cinnamon, and sugar, mixing well until you get a smooth mixture.
    3. Add the sifted flour and baking powder and start kneading with a pastry spatula: the soft apple cookie dough becomes more compact but remains creamy.
    4. Add the apples and gently mix to distribute them evenly.
    5. Use a spoon to form the cookies and place them on a baking sheet lined with parchment paper, leaving some space between each one.
    6. Bake in a preheated static oven at 350°F for about 20 minutes, until the cookies are golden and soft.
    A sprinkle of powdered sugar and the soft apple cookies are ready… perfect for a snack or a fragrant breakfast!

Storage and Tips

Soft apple cookies can be stored for 3-4 days in a well-closed tin box, away from humidity. I recommend letting them cool completely before enjoying them, so they dry perfectly while maintaining their soft texture.

For this recipe, I use Golden Delicious apples: they are juicy, not too sweet, and rich in fructose, a natural sugar that gives softness and flavor to the dough. However, you can choose the variety you prefer: any type of apple will do and the cookies will still be delicious.

If you want a gluten-free version, you can replace the flour with a gluten-free dessert mix. For an even more fragrant effect, add a pinch of ground ginger along with the cinnamon.
