Soft Bimby Shortcrust Pastry

This soft Bimby shortcrust pastry recipe is perfect for those days when, like me, you don’t have time to get your hands into dough, but still want to bake a sweet treat for breakfast, like a tart or cookies.

Preparing the shortcrust pastry with the Bimby is very quick and simple, requiring just a few ingredients like butter, sugar, eggs, flour, and half a packet of baking powder to make the pastry soft and crumbly, all of which should be cold to ensure its crumbliness. If you’re in a hurry, leave it in the fridge for at least half an hour, otherwise, it’s best for a couple of hours.

The recipe I give you is flavored with lemon zest, but you can also use orange zest or the seeds from a vanilla bean. Let’s go discover this wonderful soft shortcrust pastry.

  • 9 tbsp butter
  • 1/3 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 lemon zest
  • 1/2 packet baking powder

How to Make Soft Bimby Shortcrust Pastry

  • Preparing the Bimby shortcrust pastry is super easy and fast, starting with placing the lemon zest and sugar in the bowl and setting it for 15 Sec. Speed 8.

    Add the butter in pieces, 15 Sec. Speed 5, then the yolk and whole egg, 15 Sec. Speed 4.

    Combine the flour and baking powder, 25 Sec. Speed 4, use the spatula to gather the dough from the sides of the bowl to the center and knead again for 25 Sec. Speed 4.

  • Remove the dough and place it on the work surface, quickly shape it into a ball. The Bimby shortcrust pastry is ready, wrap it in parchment paper or cling film and refrigerate it for at least a couple of hours before using.

You can keep it in the fridge for a week or freeze it for a couple of months in a food bag.
