Soft Orange Loaf Cake

The recipe for the soft orange loaf cake is really quick.
I made it with my Bimby kitchen robot, just like the soft Bimby loaf cake with chocolate chips. If you don’t have this robot, no problem: you can easily make it with electric whisks.

Ingredients for the Soft Orange Loaf Cake (Bimby and Electric Whisks)

  • 1 3/4 cups all-purpose flour
  • 1/3 cup potato starch
  • 4 eggs
  • 3/4 cup sugar
  • 1/4 cup whole milk
  • 2/3 cup sunflower oil
  • 2 oranges (juiced)
  • 2 orange zest (grated)
  • 1 packet baking powder
  • 1/2 cup powdered sugar
  • 1 orange (juice)

You will need

  • Kitchen Robot Bimby
  • Loaf Cake Pan
  • I put the sugar and orange zest in the mixer and blend for 10 seconds at speed 7. I open the lid and scrape down the sides with a spatula.
    I add the flour, potato starch, eggs, oil, orange juice, milk, and baking powder. I run the Bimby for 30 seconds at speed 7 until I get a smooth and fragrant batter.
    I pour the batter into the greased and floured loaf cake pan, or greased with homemade pan release. I bake in a static oven at 350°F for about 40 minutes. I always do the toothpick test before taking it out of the oven.

  • In a bowl, I beat the eggs with sugar and grated orange zest until I get a light and frothy mixture.
    I add the oil, orange juice, and milk, continuing to work at medium speed. I incorporate the flour, potato starch, and baking powder and gently fold with a spatula to avoid deflating the batter.
    I pour into the greased and floured loaf cake pan and bake in a static oven at 350°F for about 40 minutes. I let it cool completely before removing from the pan.

  • In a bowl, I put the powdered sugar and orange juice. I mix with a whisk until I get a smooth, lump-free glaze. If it is too runny, I add a little more powdered sugar.
    I drizzle the glaze over the cold loaf cake and let it sit for at least an hour before serving.

Storage and Useful Tips

The soft orange loaf cake keeps under a cake dome for up to 4 days, maintaining its fragrance and softness.
For a lighter effect, you can serve it without glaze, simply with a dusting of powdered sugar.
If you want a more intense taste, you can add some dark chocolate chips to the batter or glaze it with melted chocolate.
For a lactose-free version, use lactose-free milk or a neutral vegetable drink.
