Struffoli are small, fragrant balls, fried, drizzled with honey, and covered with colorful sprinkles. These delicious Neapolitan traditional treats are perfect to prepare and serve at Christmas or for Carnival, given their colors and cheerfulness. In fact, they can be packaged as gift ideas, arranged in a dome shape on small trays and tied with a beautiful ribbon in transparent bags. They will be a splendid gift, appreciated and enjoyed😋.

Ingredients for Struffoli

  • 2 egg
  • 1.4 tbsps sugar
  • 2 cups all-purpose flour
  • 1 tbsp Strega liqueur
  • 1 pinch salt
  • 1 orange zest (grated)
  • 2.8 tbsps butter
  • 3/4 cup acacia honey
  • 1 qt sunflower oil
  • 2 tbsps colored sprinkles

Tools

  • Worktop
  • Frying pan – nonstick with high edges
  • Small pot – nonstick
  • Dish towel
  • Slotted spoon
  • Paper towels

Prepare the Struffoli

  • On the worktop, make a mound of flour and create a well in the center. Add the eggs, butter, sugar, salt, liqueur, and grated orange zest.

    Mix all the ingredients, absorbing all the flour, and knead until the dough does not stick to your fingers. Form a dough ball and let it rest for half an hour covered with a clean dish towel.

    After the resting time, dust the worktop with flour and knead it again for a few minutes, then make dough ropes. Cut small pieces and create balls, placing them well spaced on the dish towel.

    Meanwhile, in a high-edged frying pan, heat the sunflower oil to 340°F. Fry the struffoli for about 2/3 minutes, remove them with a slotted spoon, and let them cool on paper towels. Then, heat the honey in a pan, add the struffoli, mix well, and finally arrange them on a plate in a dome shape, decorate with colorful sprinkles, and serve.

Storage

They can be stored for up to a week under a cake dome.

Susy’s Tip

Struffoli should be fried a few at a time and should not have any excess flour; otherwise, foam will form during frying. If it does form, it can be removed gradually with a spoon.😜
