They are sugar-free, lactose-free, and gluten-free and can be enjoyed by those on a ketogenic diet as well as those who pay attention to sugar consumption and want to stay fit. Ingredients for Sugar-Free Coconut Cookies

  • 2 eggs
  • 0.7 oz erythritol
  • 1.5 tbsp coconut oil
  • 1 cup gluten-free coconut flour
  • 0.7 oz 85% dark chocolate

Tools

  • 1 Bowl (medium size)
  • 1 Whisk hand
  • 1 Spatula pastry

Making Sugar-Free Coconut Cookies

  • In a bowl, I crack the eggs, add the erythritol, and mix well with a whisk. I melt the coconut oil in a double boiler, pour it into the mixture, and continue mixing with the whisk. Then, I add the coconut flour and start kneading with the spatula, making the dough homogenous.

    Finally, I incorporate coarsely chopped dark chocolate and mix it well into the dough.

  • Line the baking tray with parchment paper. Take small portions of dough, roll them in your hands to create cookies. (To make rolling easier, moisten your hands with a little water).

    Now just bake at 350°F for about 15/17 minutes. Once cooked, let them cool well and enjoy them with a good coffee!
