Preparing the Super Easy Soft Dark Chocolate Cookies
Chop the dark chocolate, place it in a bowl with the butter cut into pieces. Melt everything in the microwave or bain-marie and set aside.
In another bowl, break the eggs, add the sugar and a tablespoon of vanilla extract, and whisk by hand until the mixture is nice and fluffy.
Add the dark chocolate to the egg bowl and continue whisking by hand. Then, incorporate the sifted flour and baking powder, mix with a pastry spatula, and cover the bowl with plastic wrap in the fridge for an hour. This step is crucial to make the dough compact and homogenous.
Scoop some dough with a spoon, roll it between your hands into a ball, and coat it with powdered sugar.
Place the cookies on a tray lined with baking paper or use a micro-perforated tray and bake in the oven at 356°F for about 15/17 minutes.
Take the soft dark chocolate cookies out of the oven, let them cool a bit, and then taste right away—they are delicious!
