Tall and Soft White Focaccia

The recipe for tall and soft white focaccia is really easy to make!
I use instant yeast granules (like Mastro Fornaio), perfect for those with little time: no need to dissolve it, just add it directly to the flour with a pinch of sugar to activate the fermentation.
Tall, soft, and fragrant, we often enjoy it at home instead of bread: it’s great filled with cured meats, cheeses, or grilled vegetables. A true quick dinner focaccia, perfect to bring to the table for a family lunch.
Making the dough is very simple: put all the ingredients in a bowl, mix well, and let it rise. When it is well puffed up, transfer it to a greased baking tray, create the classic holes with your fingers, season with extra virgin olive oil, salt, and rosemary… then bake it. The result? A tall, soft, and irresistible focaccia!

Ingredients for Tall and Soft White Focaccia

  • 4 cups all-purpose flour
  • 1 1/4 cups water
  • 2 teaspoons sugar
  • 2 tablespoons extra virgin olive oil
  • 1 packet instant yeast
  • to taste salt
  • to taste extra virgin olive oil
  • to taste rosemary
  • to taste salt

You Will Need

  • Bowl large
  • Spoon wooden
  • Plastic Wrap
  • Baking Tray
  • Scale
  • Parchment Paper if not using a non-stick tray

Prepare the Tall and Soft White Focaccia

  • In a bowl, pour the flour with the instant yeast and sugar, then mix well. Add the room-temperature water, alternating with the extra virgin olive oil, and mix with a spoon. When the dough begins to take shape, start kneading it with your hands.
    Lastly, add the salt and continue kneading for a few minutes until you get a soft and slightly sticky dough. Cover the bowl with plastic wrap and let it rise in a warm place for about 3 hours, or until the dough is well puffed.
    When the dough for the tall and soft white focaccia is ready, gently transfer it to a greased baking tray. Stretch it with your hands to cover the surface, then create the classic little holes on the surface with your fingers.
    Season with a drizzle of extra virgin olive oil, salt, and rosemary, cover with a cloth, and let rest for another 30 minutes.
    Bake in a fan oven at 356°F (180°C) for about 35 minutes until golden. Once ready, let my focaccia cool slightly and… everyone to the table!
