I prepared the Thun flower cookies for my son’s birthday and they were a big hit! Usually, at the end of a party, candies are given to the kids to thank them for their presence. This time, besides preparing colorful candy packages, I also purchased some very original and cute biscuit bags on Amazon, where I placed a Thun flower cookie inside. The package was very appreciated and so were the cookies… The recipe is simple and quick, a classic white shortcrust pastry and one with cocoa. To create the cookies, I made a video to show you how easy they are to make!

Ingredients for Thun Flower Cookies
- 2 1/2 cups flour
- 1/2 cup butter
- 1/2 cup sugar
- 1 egg
- 1 egg yolk
- lemon zest
- 1 tbsp unsweetened cocoa powder
Prepare the Thun Flower Cookies
On the work surface, I place the flour in a mound, make a well in the center, and add the egg and yolk, sugar, butter in pieces, and grated lemon zest. Using a fork, I begin to mix and knead with the flour, adding a little at a time. Once a nice dough ball is formed, I divide it into two parts and quickly knead one with the cocoa. Then I wrap the two doughs separately in plastic wrap and let them rest in the fridge for at least two hours to make them more compact and elastic.
I prepare a tray lined with parchment paper where I will place my Thun flower cookies.
Then I start by taking a piece of shortcrust pastry, forming a ball about the size of a hazelnut, which will be the center part of the flower. Next, I proceed to make 7 more and place them all around the first ball to form the petals.
With a toothpick, I press the center of each petal to give it a slight natural effect. I place the tray in the refrigerator for a few hours to ensure they do not lose their characteristic shape during baking.
After chilling in the fridge, I bake at 356°F for about 15 minutes. Once ready, I let them cool and then prepare the packages.
