Ingredients
- 10.5 oz chicken breast
- 10.5 oz artichokes, frozen (already cleaned and quartered (frozen) or 4-5 fresh artichokes)
- 3 tbsp flour
- 0.5 cup dry white wine
- 1 sprig rosemary
- 1 clove garlic
- as needed vegetable broth
- 3 tbsp extra virgin olive oil
- to taste salt
- to taste pepper
Tools
- 1 Skillet
Steps
To prepare Skillet Artichoke Chicken, cut the chicken breast into 1-inch pieces with a sharp knife, salt them, and coat them in flour.
Heat a skillet with the olive oil, peeled and crushed garlic clove, and chopped rosemary. Remove the skillet from the heat, wait a moment for the oil to cool slightly to avoid splattering.
Shake off excess flour from the chicken pieces, place them in the skillet, which you will return to the heat, and brown them well on all sides, turning often.
Meanwhile, if you have whole fresh artichokes, prepare them by following the cleaning method found here–> Artichokes in White Wine and set them aside.
Alternatively, frozen artichokes, already cleaned and quartered, are perfectly fine.
When the chicken bites are well browned, add the artichoke quarters, salt, and pepper, and cook for a few minutes over high heat, then pour in the white wine and let it evaporate completely.
Now add half a cup of water or broth, cover with a lid and cook the artichokes, adding more water if necessary, and stirring gently.
The artichoke chicken will be ready when the artichokes can be easily pierced with a fork.
Finally, sauté everything for a few minutes without the lid to let the excess water evaporate.
Once cooked, adjust for salt and pepper if necessary and serve the Skillet Artichoke Chicken immediately.
