- Difficulty: Very Easy
- Cost: Economical
- Preparation time: 10 Minutes
- Portions: 2
- Cuisine: Italian
- Seasonality: Spring, Summer, and Fall
Ingredients
- 7 oz canned sweet corn, drained
- 3 leaves lettuce
- 7 oz tuna in oil
- 1 red Tropea onion
- 3 oz fontal cheese
- 3.5 oz buffalo mozzarella
- 4 tbsps extra virgin olive oil
- to taste vinegar
- to taste salt
- to taste pepper
Tools
- 1 Bowl
- 1 Knife
Steps
To prepare the Summer Corn and Tuna Salad, first thinly slice the onion, place it in a bowl and cover with vinegar. Set aside and let rest for at least half an hour.
This process will make the onion more digestible. But if you don’t have any issues, you can skip this step.
Wash the lettuce leaves and dry them with paper towels, then tear them into pieces or strips, if you prefer. Place them in a large bowl.
Add the drained corn and tuna, the fontal cheese cut into cubes, and the mozzarella in strips.
Add the onion well-drained from the vinegar and dress everything with extra virgin olive oil, salt, and pepper, and mix everything gently.
Serve at the table and enjoy your meal!
Storage and Variations for Summer Corn and Tuna Salad
The Summer Corn and Tuna Salad can be stored in the refrigerator for up to a day, and I recommend adding the lettuce at the last moment to keep it fresh and crispy.
For an even more delicious touch, you can add some mayonnaise or a yogurt sauce, lighter and healthier.
You can use any type of lettuce you prefer.
You can add green or black olives, anchovies, capers, cherry tomatoes, artichokes in oil, in short, any variant will be very tasty.
