Preparation of Soft Cake with Chestnut Flour, Apples and Raisins Without Butter
First of all, before starting the batter for this delicious cake, which also has the advantage of being gluten-free, soak the raisins in a cup of warm water so it has time to rehydrate.
In a bowl large enough to hold the batter, beat the three eggs with a pinch of salt and sugar. It is better to use an electric or hand whisk for this operation.
When the eggs are beaten, add the tablespoon of honey and the yogurt. Mix well, then add the oil. At this point, you can add the chestnut flour. Blend it well until you get a smooth, lump-free batter.
With the help of a spatula or a spoon, mix the rum and the raisins into the batter, which you have previously drained and dried. Finally, add the sifted baking powder. Mix well and transfer to a springform pan that you have lined with a sheet of parchment paper.
Preheat the air fryer for 5 minutes and in the meantime peel and slice the apples. Arrange them in the batter in a radial pattern, making sure they all fit and bake for 30 minutes at 320°F in the air fryer. Use the Bake function and place the pan directly on the bottom, without using the grate.
Do not open the air fryer during cooking, then after the necessary time to bake the cake, check the cooking, close again, and let the cake rest in the turned-off fryer for another 5 minutes.
Let the apple and chestnut flour cake cool before removing it from the pan, and then, if you like, sprinkle it with powdered sugar.
This cake keeps for a couple of days at room temperature enclosed in a cake carrier. If any is left over after a couple of days, put it in the refrigerator because otherwise, the apples may mold.
