Ingredients

  • 1 jar yogurt
  • 3 jars chestnut flour
  • 1 jar sugar (and a half)
  • 1 tablespoon honey
  • 1 jar vegetable oil (lacking)
  • 3 eggs
  • 1 pinch salt
  • 1 tablespoon rum
  • 2 tablespoons raisins
  • 2 apples
  • 1 teaspoon vanilla extract
  • 1 packet baking powder

Preparation of the Soft Cake with Chestnut Flour, Apples, and Raisins without Butter

  • First of all, before starting the batter to prepare this delicious cake, which also has the advantage of being gluten-free, soak the raisins in a cup of warm water so they have time to rehydrate.

  • In a bowl large enough to hold the batter, beat the three eggs with a pinch of salt and the sugar. It’s better to use an electric or manual beater for this task.

  • When the eggs are beaten, add the tablespoon of honey and the yogurt. Mix well, then add the oil. At this point, you can add the chestnut flour. Mix it well until you get a smooth and lump-free batter.

  • With the help of a spatula or a spoon, mix the rum and the raisins, which you have previously drained and dried, into the batter. Lastly, add the sifted baking powder. Mix well and transfer to a springform pan lined with an parchment paper sheet.

  • Preheat the air fryer for 5 minutes and in the meantime peel and slice the apples. Insert them into the batter in a circular pattern, making sure they all fit, and bake for 30 minutes at 320°F in the air fryer. Use the Bake function and place the pan directly on the bottom, without using the rack.

  • Do not open the air fryer during cooking. After the necessary time to bake the cake, check the baking, close it again, and let the cake rest in the turned-off air fryer for another 5 minutes.

  • Let the apple and chestnut flour cake cool before removing it from the pan, and then, if you wish, dust it with powdered sugar.

This cake keeps for a couple of days at room temperature closed in a cake carrier. If there is any leftover after a couple of days, place it in the refrigerator to prevent the apples from becoming moldy.
