Coffee and Chocolate Bundt Cake in Air Fryer

Coffee and chocolate bundt cake in air fryer, cooked in less time but with a perfect result. As I have already shown in my blog, the air fryer can also be used with baked goods that need to rise. The only downside compared to a traditional oven is the size; you can’t fit traditional-sized pans, but that’s its advantage, allowing you to cook anything quickly, even a bundt cake. Just use a smaller pan and adjust the amount of ingredients. The recipe for this coffee cake, enriched with dark chocolate chips, is not my invention. Often, I experiment with new desserts, but this one, I must admit, I found some time ago on a packet of baking powder. It is really good, with that special coffee aroma, and so I have simply adapted the ingredients and baking to that magical tool I can’t do without: the air fryer.

Ingredients

  • 6 tbsp butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 pinch salt
  • 2.7 tbsp milk
  • 2.7 tbsp coffee (espresso)
  • 1 cup all-purpose flour
  • 1/3 cup potato starch
  • Half baking powder
  • 1/3 cup dark chocolate

Steps

  • Before you start making this delicious mocha cake, prepare the coffee, which you will need to use cold, and take the butter out of the fridge because it needs to be nice and soft.

  • In a large bowl, work the soft butter with 80g of granulated sugar. Then, while stirring with a whisk, add the yolks, one at a time.

  • When the eggs are well incorporated into the butter and sugar, add a pinch of salt, the milk, and the coffee, which by now will have cooled. Mix everything well until you reach a soft and homogeneous mixture.

  • In another bowl, beat the egg whites with the remaining sugar, 45g, until stiff peaks form.

  • Pour the beaten egg whites into the bowl of the first mixture and place the sifted flour, starch, and baking powder on top.

  • Mix all the ingredients well using the whisks on low speed or by hand with a spatula or spoon.

  • Chop the dark chocolate into pieces and mix it into the batter.

  • Pour into the springform pan, lightly buttered and floured, all the batter and level it with the spatula.

  • Preheat the air fryer for 5 minutes and then cook the coffee and chocolate bundt cake for 30′ at 320°F, placing the pan directly on the bottom, without the grate. Do not open it during cooking. Once the time is up, check with a toothpick that the bundt cake is cooked, then close again and let it rest for another 5 minutes in the warm air fryer.

  • Unmold and let the bundt cake cool completely before turning it over onto a serving plate. If desired, you can sweeten it by dusting with some powdered sugar.

My Advice

This bundt cake has a unique taste, not too sweet and with a good coffee aroma, and is generally not very appreciated by children. However, if it is also intended for them, I suggest using decaffeinated coffee. You can also use decaffeinated coffee if you are very sensitive, like me, to the effects of caffeine, so you can eat it at any time, even after dinner.

FAQ (Questions and Answers)

  • Can I substitute the butter with other fats?

    You can use margarine, a vegetable fat instead of animal, for the butter.

  • Can I leave out the chocolate in the bundt cake?

    You can omit it, although I wouldn’t recommend it because it’s excellent as is, or use another type of chocolate, like milk or even white chocolate.

  • Can I bake the bundt cake in a traditional oven?

    Of course, if you don’t have an air fryer yet, you can easily bake it in the oven. In this case, I would suggest doubling the doses and using a 24cm pan to make the most of the energy used by your oven and bake at 350°F for about 45 minutes.
