Steps
This recipe is really very simple. Start by chopping the dark chocolate. Reduce it to flakes using a sharp knife and a clean and odorless cutting board. Transfer it to a bowl large enough to easily hold the cream as well.
In a saucepan, always very clean, heat the cream with the glucose. Melt the glucose while stirring, and turn off the heat before the cream reaches a boil.
Now pour the hot cream over the flakes of 70% dark chocolate . Stir with a spatula or a hand whisk until the chocolate has completely melted. Let it cool and then refrigerate to set for at least a couple of hours.
When the chocolate ganache is well set, proceed to form quenelles with two coffee teaspoons
