Chocolate salami is a dessert that brings nostalgia, I think back to when I was a child and my mother prepared it. One of the few desserts she made, she didn’t like cooking much, and the oven wasn’t among her favorite friends. I remember when it was unwrapped, what was magic for us children, the transformation from a heap of disorganized crumbs into one of the tastiest desserts. My recipe is grandma’s chocolate salami without eggs, with this small variation from the old recipe. Driven by a small allergy problem, but also safer, because without raw egg it is suitable for everyone, both adults and children, who usually adore this little treat!

Ingredients
- 5 oz plain biscuits
- 1/2 cup sugar
- 1/2 cup butter
- 1/2 cup unsweetened cocoa powder
- 1/2 cup blanched almonds
- as needed milk
- 1 small glass rum
- as needed powdered sugar

Preparation
My dessert is also intended for children, so first remove the alcohol from the Rum. Put it in a narrow and tall saucepan and heat it. When it’s hot, turn off the flame and light it with a match. Let all the alcohol evaporate and then let it cool down. In this way, the dessert will be flavored with rum, but not alcoholic.
Collect the softened butter in pieces in a bowl and whip it into a cream with the sugar, using electric whisks if possible.
Gradually add the cocoa, sifting it in a light shower. Then add the rum and mix well.
Coarsely crush the biscuits, don’t reduce them to flour. Mix them into the mixture.
You can simply crush them with a rolling pin.If you put them in a plastic food bag before crushing, you will avoid crumbs everywhere and won’t waste anything.
Also coarsely chop the almonds and add them to the mixture.
Moisten with a couple of tablespoons of milk, mix well and transfer everything onto a piece of parchment paper dusted with powdered sugar.
Shape into a salami and roll it in the parchment paper. Tighten the ends well and let grandma’s chocolate salami without eggs firm up for at least a couple of hours in the refrigerator.
