Ingredients
- 1 chicken, skinless, raw
- 2 eggs
- 1 lemon

Steps
Prepare an emulsion with oil, lemon juice, salt, and pepper. Put everything in a bowl and beat with a fork.
Place the chicken pieces, which should be rather small to cook well inside, in the prepared emulsion. Let them marinate for about an hour, covered with another dish. You can also leave it for a few hours, but in this case, put it in the refrigerator.
When it’s time to cook, drain them slightly and flour the chicken pieces. Dip them in the egg that you have beaten first with a fork and then in breadcrumbs.
Fry them in plenty of hot oil, a few pieces at a time. If you want to make it even tastier and softer, add a piece of butter to the frying oil. Keep it over the heat, not too high, for about 15 minutes. It should be crispy outside but should also have enough time to cook well inside.
