Marinated beef roast cooked in electric pressure cooker
When I think of a roast, I don’t know why, the first one that comes to mind is the classic veal roast, cooked in a pot, the veal roast that was made in the family. The recipe we used for years, when cooking for everyone on special occasions. However, beef was usually cooked in other ways, rarely roasted. But this changed when I discovered this recipe, and since then I use it often. Cooked this way, the meat is very tender and especially flavorful and juicy, try this new delight too!

Ingredients
- 1.76 lbs beef
- Half cup extra virgin olive oil
- 1.4 tbsp butter
- 1 onion
- 1 bunch parsley
- 1 leaf bay leaf
- A few leaves aromatic herbs
- A few grains black pepper
- to taste salt

Steps
To achieve a tasty and tender beef roast, marinate the meat overnight. Place it in a large bowl with plenty of oil, peppercorns, chopped bay leaf, parsley, aromatic herbs, and sliced onion. Cover the bowl with a lid or plastic wrap and let it rest.
After this time, remove the beef from the marinade and roast it with oil and butter using the Sauté function, normal setting. Turn it and when it is well browned all over, season with salt.
Add the marinade to the pot as well. Close the lid and cook for 1 hour in Pressure Cook mode, normal setting.
When cooking is complete, vent the steam by opening the valve. Remove the roast from the Instant Pot and slice it. Pass the sauce through a fine-mesh sieve and thicken it over low heat. Reheat the slices of meat before serving.
If you prefer a thicker and creamier sauce, you can mix half a tablespoon of flour with some butter and melt it in the open pot on Sauté mode until it browns, then add the gravy to thicken it.
You can serve the meat covered with the sauce or serve it separately in a gravy boat.
My Advice
This marinated beef roast is tender and flavorful, enjoy it with polenta or mashed potatoes, drizzling them with its gravy. If you prefer something lighter, even a green salad dressed with a little oil and salt is perfect to fully enjoy the goodness of this roast.
Once sealed in an airtight container, it keeps perfectly in the refrigerator for a few days.
