Ingredients
- 1.1 lbs pork meat
- 1 carrot
- 1 onion
- 3 potatoes
- 1 clove garlic
- 1 beer (11 oz)
- 1 tbsp flour
- 2/3 oz butter
- A few leaves sage
- 1 sprig rosemary
- 3 tbsp extra virgin olive oil
- to taste salt
Tools
- 1 Instant pot
- 1 Chopper
- 1 Wooden Spoon
- 1 Knife
Steps
If you’ve bought a nice whole piece of lean pork, I used loin, cut it into large cubes approximately 1.5 inches on each side.
Clean and wash the vegetables, also wash the sage leaves and rosemary.
Chop the carrot with the onion, aromatic herbs, and garlic clove, not too finely. If you don’t like the strong taste of garlic, leave the clove whole, which you can remove at the end of cooking.
Lightly flour the meat. Put the oil in the pot and set the Sauté function to high mode, let it heat, and then add the pork stew.
Brown the meat and then add the chopped vegetables to fry slightly, being careful not to burn them.
Add salt, pour in the beer, mix well, and then close the Instant Pot lid. Set the cooking time to 40 minutes, Pressure Cook, High pressure Normal. Remember to close the steam release valve.
While you wait for the pork to cook, peel the potatoes and cut them into fairly large pieces. When the 40 minutes are up, open the pressure cooker steam valve, add the potatoes, the piece of butter, and lightly salt. Stir with a spoon to distribute the potatoes, and close the pot again.
Now, another 10 minutes of cooking are needed, with the same settings as before.
When the 10 minutes are up, release the steam valve, open the Instant Pot lid. You may need a few more minutes to dry the preparation and achieve a perfect stew with beer potatoes. Use the sauté function to reach your desired consistency. Taste and adjust salt if necessary.
And here are your pork bites with beer, with little expense, no odors and very few things to wash in the kitchen!
My Advice
Store leftover stew in a closed container in the fridge for one day. You can also freeze it, but remove the potatoes.
