Ingredients

  • 2 cups all-purpose flour
  • 7 tbsp butter
  • 1/3 cup water (cold)
  • 1 pinch salt
  • 2 leeks
  • 1 1/4 cups ricotta cheese

Steps

  • To prepare it quickly, you can use a mixer; I prepared it with the Thermomix, but nothing prevents you from preparing it by hand.

  • With the Thermomix, the preparation is very simple. Pour the flour into the bowl and then the other ingredients. Knead for 15 seconds at speed 4. Remove the lid, gather the ingredients at the bottom, and then activate again for 5 seconds at speed 5.

  • Let the dough rest in the refrigerator for at least 15 minutes wrapped in plastic wrap.

  • Trim the leeks, remove the tougher part at the top and the outer leaf. If they are particularly large, you may need to remove two. Cut them lengthwise so you can wash them thoroughly inside, as they are often dirty with soil. After washing them, cut them into fairly thin rings.

  • Peel the sausage and break it into pieces. Brown it in extra virgin olive oil and then add the leek rings. Salt and cook for about ten minutes and set aside.

  • In a fairly large bowl, work the ricotta with the egg and a pinch of salt. If you like, you can also add a pinch of pepper. To give a little more flavor, a nice tablespoon of grated Parmesan cheese is perfect.

  • Add the cooked sausage with leeks to the ricotta and egg mixture and mix well.

  • Roll out the dough inside the pan leaving a border of a couple of centimeters. Transfer the mixture into it, level it, and fold the excess dough to form a border. Brush it with oil, using a brush, for a shinier surface after baking.

  • Bake in the oven at 356°F for about 40 minutes. Before removing it, check the cooking. If it’s not well colored on the surface, continue for a few more minutes.
