Shortcrust pastry made with ricotta

Shortcrust pastry made with ricotta and very little butter. Lighter than the traditional one, but with less fat, therefore suitable for those who have some issues with butter but still want to enjoy a slice of savory pie. I don’t know about you, but I adore savory pies, maybe because even if they are vegetable-based, just hearing the word pie lifts my spirits. Maybe because the vegetables are so hidden inside a crunchy crust that it feels like you’re not even eating them, and just like children, I feel that if I eat one more piece, I’ve been good! From a very old Bimby cookbook, the recipe, which like all the most important ones in my kitchen, I keep jealously and reveal only to you.

Ingredients

  • 2 cups all-purpose flour (or type 0 flour)
  • 3.5 oz ricotta
  • 3.5 oz butter (softened)
  • 1 egg
  • 2 tsp salt

  • 1 Kitchen scale
  • 1 Spoon

You can easily prepare the shortcrust pastry with ricotta by hand. In this case, you’ll need a large enough bowl to gather all the ingredients to knead.

Steps

  • Weigh the ingredients with a kitchen scale, as the Bimby scale is usually not very accurate, and put into the : flour, softened butter, ricotta, egg, and salt.

  • Close the lid and activate the device for 1 minute at kneading speed.

  • Open and with a spatula gather the ingredients that have stuck to the sides of the bowl.

  • Close the lid and knead again for 1 minute at kneading speed. Gather the dough and compact it with your hands to form a ball that you can roll out with a kitchen rolling pin.

If you don’t have a Bimby, you can use any kitchen robot. If you want to prepare the shortcrust pastry with ricotta by hand, put the flour in a large bowl, mix in the salt, then add the egg, ricotta, and softened butter. Quickly knead with your fingers until a ball forms. A little flour might be necessary to help you detach the dough from your hands.

You can use the pastry immediately once it’s ready, or you can wrap it in food wrap and store it in the refrigerator for a few hours until ready to use.
