Strawberry jam without pectin with the Thermomix, spring in a jar!
The jam I prefer the most is definitely strawberry. Blueberry follows right after. However, as blueberries are hard to find in large quantities, unless it’s midsummer and risking your neck slipping down the mountains or taking out a mortgage to buy the necessary amount to make jam, the ‘blue’ jam is beaten 10 to 0 by the ‘red’ cousin. Not too sweet and very fragrant, this version of jam, slightly mint-scented, will delight you. Open the jar, hold on a moment, and before tasting it, smell it… the scent of spring was locked here and you’ve set it free!

Ingredients
- 2.2 lbs strawberries (already cleaned)
- 2.5 cups sugar
- 1 lemon
- 6 leaves mint

Steps
Wash the strawberries well, drain the water, and dry them with a clean cloth. Remove the green part and cut them into two or three parts depending on the size, and place them in the bowl with the sugar and the peeled lemon.
Also add the mint leaves, 5 or 6, not more, and blend everything for a few seconds at speed 5.
Close the Thermomix lid and set cooking to 212°F for about 50 minutes. Cover with the basket upside down on the lid to prevent splashing everywhere.
It may be necessary to lower the temperature to 194°F for a few minutes to prevent too much splashing.
Thicken the jam for the last few minutes at Varoma temperature, at speed 2. It will take 10 to 20 minutes.
Let the mint strawberry jam rest a few minutes in the bowl and then transfer it into clean and sterilized jars. Close and turn upside down until cooled.
Usually, after filling the 3 jars, there is a leftover amount of jam that is not enough to fill a fourth. Put it in a bowl and consume it within a few days.

If you want a thicker jam, you can add an apple during cooking. Very rich in pectin, the apple will help you achieve it.
Like all homemade jams, even this strawberry one, if prepared with less sugar than recommended, will last less time. The sugar amount should be the same quantity as the weight of the fruit, but nowadays we don’t like too sweet things very much. Technology helps us, that is, the refrigerator. Do not make large quantities if you do not have a place in the fridge to store it or if you do not intend to consume it in a short time.
Last tip, put a large sheet of paper under the Thermomix during cooking, which will collect any sticky splashes and save you cleaning.
