Ingredients

  • 2.2 lbs tangerines
  • 1 apple
  • 2 1/2 cups sugar
  • 1 lemon
  • 3 tbsps cognac (optional)

  • 1 Thermomix

Steps

  • Peel the tangerines, cut them in half, and remove the inner filaments. However, there is no need to remove the few seeds they contain. Peel the apple and cut it into chunks.

  • Place the fruit in the bowl, add the sugar and the juice of half a lemon.

  • Close the Thermomix lid and blend the fruit for 10 seconds at speed 5.

  • Activate the Thermomix and cook at 212°F for 60 minutes at speed 2, without the cup, but with the basket upside down on top to prevent splashes everywhere.

  • After an hour, turn off the Thermomix, open it, and stir. Add the liquor, Cognac, or even Rum, and restart cooking. It should take about another 30 minutes to reach the right consistency. However, check the cooking from time to time.

  • Once cooked, pour the tangerine marmalade into the jars that you have previously washed and sterilized, close them and turn them upside down until they cool.

  • To make the marmalade without a Thermomix, proceed in the same way, putting fruit and sugar in a high-sided pot. Cook for about an hour, blend with an immersion blender, and then continue until you reach the right density.

My Advice

Like all marmalades made with little sugar, this clementine jam doesn’t keep for long. I store them in the fridge, so they can be consumed even after 5 or 6 months.
