I must confess boiled carrots are among the vegetables I like least—perhaps second only to beets, my sworn enemies. Here I dress them with simple but tasty, easy-to-find ingredients to make this boiled carrot salad flavorful, even for my picky palate!

- 14 oz carrots
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice

Steps
This recipe is really simple to prepare. Trim and lightly scrape the carrots with a serrated knife or with a vegetable peeler.
Meanwhile, bring lightly salted water to a boil.
Boil the carrots in boiling water for 10-15 minutes depending on their size. Drain them when cooked and cut into slices.
Put the carrots in a large bowl and dress them with the little sauce you prepared by mixing mayonnaise, mustard, lemon juice, olive oil and salt in a small bowl. Mix well with a spoon.
