This recipe is very easy to make; just follow some tips to ensure the leeks don’t burn and the fish is tender and well golden.

Ingredients

  • 1 package cod fillets (360 g.)
  • Half leek
  • 1 teaspoon pickled capers
  • 6 olives (green and black)
  • 2 tablespoons breadcrumbs
  • to taste extra virgin olive oil
  • to taste salt
  • 1 pinch garlic powder

How to Prepare the Cod Fillets

  • Rinse the frozen fillets from the glaze as per the manufacturer’s instructions. Dry them well and coat them with olive oil.

  • Roll them well in breadcrumbs. Press the breadcrumbs with your hands so that it sticks to the fish fillets.

  • Clean and wash the leek well, be careful as sometimes dirt remains inside, dry it and cut it into rings. Also cut the olives into not too small pieces.

  • Prepare a bed with leek, olives, and capers. Flavor with oregano and garlic powder, lightly salt, and drizzle with a little olive oil. I use a sheet of baking paper in the tray to prevent it from crusting and to use a little less seasoning.

  • Lay the cod fillets over the leeks.

  • Completely cover the leeks, olives, and capers with the breaded cod fillets, this will protect them from burning. Drizzle the fish with extra virgin olive oil, lightly salt, and place in the fryer.

  • Cook the fish fillets with olives and capers in seafood mode, fish cooking, at 375°F for 8 minutes. Then turn them over and continue cooking for another 8 minutes.

My Recommendation

Once thawed and cooked, it is good practice to consume the cod fillets within 24 hours.

FAQ

  • What if I don’t have an air fryer?

    Cook the frozen cod fillets using the oven in convection mode, following the same procedure indicated in the recipe for the air fryer. It is likely to take a few more minutes compared to air fryer cooking.
