When we’re in a rush and need to make dinner quickly, these quick light nuggets without eggs are the right solution to please both adults and kids! You only need a few ingredients, but the result is guaranteed and if you don’t have an air fryer, you can also bake them in the oven and they will still turn out great!! Ingredients
- 2.2 lb chicken breast
- 4 tablespoons breadcrumbs
- 1.1 oz grated Parmesan (or Grana Padano)
- to taste roast seasonings (with salt)
- to taste smoked paprika (or sweet paprika)
- to taste extra virgin olive oil

Preparation
Cut the chicken breast into bite-sized pieces, place them in a bowl, add a good drizzle of oil, the breadcrumbs, the spices and the cheese, mix everything with a spoon and arrange in the air fryer basket.
Cook for 15 minutes at 392°F, tossing them gently halfway through cooking, either by shaking the basket or carefully turning them.
Remove from the fryer when the chicken has formed a nice golden, crispy crust and serve hot.
If you don’t have an air fryer, bake in a preheated convection oven at 392°F for 20 minutes, turning halfway through cooking.
I recommend preparing only the amount of chicken you plan to eat, because it’s much better right out of the fryer. If you have leftovers, store them in the fridge in a well-sealed airtight container and reheat in the air fryer shortly before serving.
