These sugar-free pancakes with apple and banana are made with a few simple ingredients: flour, fruit and a liquid of your choice like water or milk, with no eggs or butter. Soft and naturally sweet thanks to the fruit, they are perfect for a simple and wholesome breakfast: make them in a few minutes to start the day with a light homemade treat suitable for the whole family.

To make these pancakes you only need a blender or a food processor and the listed ingredients.

You can use oat flour or all-purpose (00) flour for this recipe. You can add nuts like almonds or walnuts to the batter or replace one tablespoon of flour with one tablespoon of unsweetened cocoa powder and the result will still be excellent. Let’s hurry to the kitchen and make the pancakes

Ingredients for the sugar-free apple and banana pancakes

  • 3.5 oz (about 3/4 cup) flour (all-purpose or oat flour)
  • 1 apple
  • 1 banana
  • 1 teaspoon baking powder
  • as needed plant-based milk (or water, if necessary, to adjust the batter)

Preparation of the Apple and Banana Sugar-Free Pancakes

  • To make these light pancakes without sugar, eggs or butter, place the flour, the peeled apple with the core removed, the banana and the baking powder into the blender jar. Blend everything, then adjust the batter’s consistency by adding a little milk or water as needed.

  • Once you have a creamy, not too runny consistency (if too runny, adjust with a little more flour), lightly grease the pan with a thin film of oil or butter and heat it over the stove. When the pan is hot but not smoking, pour the first two tablespoons of batter. You do not need a special pancake pan; just make sure the amount of batter forms a disk about 4 inches (10 cm) in diameter. Cook the first side of the pancake over very low heat for 1 minute and 45 seconds, flip it and cook the other side for the same amount of time. In total you should cook each pancake for about 3 minutes and 30 seconds. Continue until all the batter is used: the apple and banana pancakes are ready to be enjoyed plain, with maple syrup, honey, fruit or peanut butter.

Storage notes and tips

You can store the sugar-free apple and banana pancakes well sealed in a food-grade plastic bag and consume them within 2-3 days, or you can freeze them individually, put them in a bag and use them as needed after thawing at room temperature for a few minutes and reheating.
