Ingredients to make baked potatoes and zucchini
- 1.65 lbs Zucchini (about 3–4 medium)
- 1.65 lbs Potatoes (about 3–4 medium)
- 1 onion (medium)
- to taste salt
- to taste extra virgin olive oil
- to taste rosemary

Preparation of potatoes and zucchini in the oven
For this recipe you can use a conventional oven or the microwave with the crisp function.
If your microwave has the crisp function and you have the appropriate plate, you can use it perfectly; otherwise, bake everything in a conventional oven.
Wash, peel and cut the potatoes into chunks, add the onion finely chopped and finish with the zucchini cut into chunks as well.
Season with salt, drizzle with a good amount of olive oil and put in the oven.
If using the microwave, cook on the low rack for 45 minutes, setting the crisp function and stirring from time to time.
If you choose a conventional oven, bake at 392°F (preferably fan-assisted) for 40-45 minutes, stirring occasionally in this case as well.
When cooking is complete, add a little rosemary, preferably fresh, and serve hot.
Storage notes and tips
Consume this side dish while it is still hot and fragrant. Store any leftovers in the refrigerator in an airtight container and consume within 24 hours, maybe using them in an omelette as a recovery recipe.
