To obtain a firm chia seed pudding, just leave the seeds to soak in yogurt or milk until you get a creamy and delicate texture, similar to a real pudding, ideal to enrich with fresh fruit or with homemade granola.
Chia seeds with yogurt are a wholesome breakfast that can also be prepared the night before, perfect for anyone who wants a sweet but light break, ready to enjoy in the morning along with other ideas for a healthy breakfast such as banana pancakes, pancakes without sugar, homemade Greek yogurt or kefir yogurt.
For an even more nutritious version you can pair them with almond milk or a teaspoon of cashew butter, to get a simple but complete breakfast that gives energy and a feeling of fullness throughout the morning.
In this recipe we’ll pair them with Greek yogurt and strawberries to create a satisfying, indulgent and light breakfast or snack, a little treat to enjoy slowly, as was done at home in the past. Of course you can replace the strawberries with any seasonal fruit you prefer, as in the Chia pudding with kiwi and melon.
A short note about chia seeds:
Chia seeds come from Salvia hispanica, a plant belonging to the Labiatae family, native to Mexico. They are naturally rich in calcium, vitamin C and omega-3s, promote intestinal well-being and contribute to the proper functioning of the nervous system, also providing benefits to the heart and eyes.
Already the Mayans and Aztecs considered them a precious food: they believed that eating them gave warriors the strength needed for battle. Belonging to the oilseed category, they have properties that promote a feeling of fullness, help reduce fat absorption and contribute to regulating blood sugar levels. A small treasure of nature, simple to bring to the table every day!

Ingredients to make yogurt with chia seeds
- 3 1/3 tbsp chia seeds
- 3/4 cup + 1 tbsp + 1 tsp cup Greek yogurt (or plant-based milk of your choice to hydrate the seeds)
- 3/4 cup + 1 tbsp + 1 tsp cup Greek yogurt (to assemble the rest of the breakfast)
- to taste sweetener (stevia, or sugar or honey)
- cups strawberries
- to taste mint (for garnish)

Preparation of chia seeds and yogurt
Put the chia seeds in a bowl, pour the yogurt, mix and place in the refrigerator for at least two hours or until the mixture has thickened. If you prefer, you can replace this portion of yogurt (about 3/4 cup + 1 tbsp + 1 tsp) with plant-based or cow’s milk to obtain a less dense pudding.
Wash and cut the strawberries or other fruit, mix them with the yogurt sweetened to taste. Assemble the glasses with a first layer of yogurt and fruit, a second layer of rehydrated chia seeds and a third layer of yogurt and fruit (I preferred to blend the third layer to obtain a homogeneous texture).
Garnish with fresh fruit as you like — in this case strawberries — and enjoy.
Chia seeds with yogurt and fruit can be stored in the refrigerator, well covered, for 24 hours. It is possible to prepare them in advance and let them rest overnight, which will give an even creamier consistency in the morning.
If decorated with fresh fruit, it is advisable to add it only at the time of serving to preserve its flavor and texture.
