Chicken with Olives and Sun-Dried Tomatoes

Pan-fried chicken with black olives and sun-dried tomatoes, a simple and tasty recipe to prepare chicken in an original and appetizing way and ideal if you still don’t know how to cook chicken.
Chicken is a versatile type of meat that lends itself to a thousand preparations and I really like experimenting with new recipes that feature it as the star, such as the Spicy roasted chicken (Pollo alla diavola), beer-braised chicken drumsticks and chicken with almonds, but recipes with chicken are truly many and endless.
A few days ago, for example, I prepared chicken thighs and drumsticks with olives and sun-dried tomatoes, a dish similar to Mediterranean-style pan-fried chicken, exceptionally flavorful but a bit simpler, a tasty main course that captures delicious tastes and aromas.
Colorful, flavorful, tender, juicy, rich and very easy to make, pan-fried chicken with black olives and sun-dried tomatoes is a dish that had great success at my home, a unique and exceptional preparation liked by everyone and that disappeared in an instant, a chicken main course that I will make again soon!

Ingredients to make pan-fried chicken with black olives and sun-dried tomatoes

  • 4 lbs chicken (thighs and drumsticks)
  • 2 onions (large)
  • 3/4 cup white wine
  • to taste salt
  • 3.5 oz sun-dried tomatoes
  • 2.5 oz green olives in brine
  • 2.5 oz oven-baked black olives
  • to taste black pepper
  • to taste basil
  • to taste rosemary
  • to taste extra virgin olive oil

How to make pan-fried chicken with black olives and sun-dried tomatoes:

  • Slice and sauté the onions until golden.

    Add the chicken pieces and brown them well on all sides, turning frequently.

    Pour in the wine and let it evaporate over high heat.

  • Lightly season with salt, cover the pot and cook over low heat for 45 minutes.

    After this time you will find a lot of liquid in the cooking base; raise the heat and let it evaporate.

    Add the olives, sun-dried tomatoes, basil and rosemary, stir for a few minutes to combine the flavors and turn off the heat.

    Let it rest for a few minutes, plate and serve.
