Ingredients for quick pancakes

  • 2 cups All-purpose flour
  • 2 Eggs (large)
  • 7 tbsp Butter
  • 3/4 cup Milk
  • 7 tbsp Sugar
  • 1 packet Baking powder
  • 1 packet Vanillin (or 1 teaspoon vanilla extract)
  • 1 pinch Salt

How to make fluffy pancakes


To obtain soft homemade pancakes it’s important to prepare a smooth, lump-free batter using ingredients at room temperature. With this basic fluffy pancake recipe you will get tall and tender pancakes, perfect for breakfast.
By following a few simple steps you’ll obtain golden, soft homemade pancakes, ideal to serve with honey, maple syrup or jams.

  • To make the basic pancake batter, whisk the eggs and sugar until the mixture is very frothy and light. You can use a whisk by hand or an electric mixer; I used a hand whisk for convenience, but electric beaters will make the pancakes even fluffier. Gradually add the flour and mix until you obtain a smooth, homogeneous batter, add the melted butter in a thin stream and finally the salt, baking powder and vanillin; incorporate everything well.

  • Lightly oil a small frying pan and wipe off the excess with a paper towel. Heat it and pour one or two tablespoons of batter into the pan — of course this depends on the size of your pan — then tilt the pan slightly to level the batter. Cook over very low heat for about two minutes; as soon as holes form on the surface, flip and cook for the same amount of time on the other side. Stack your pancakes on top of each other so they stay warm, then serve with honey, maple syrup, hazelnut spread, fruit and whatever you like…

Storage notes and tips

You can store leftover fluffy pancakes sealed in a plastic food bag and consume them within 2 days, or you can freeze them individually, place them in a food bag and use them as needed after thawing at room temperature for a few minutes and reheating.
