Fried pasta snacks or pasta chips: a very tasty and different appetizer, original and light, perfect to crunch on with family or friends while watching TV, a football match or playing cards, but without guilt! It’s true, there are so many pasta recipes, but none of them has ever transformed pasta into a tempting snack comparable to bagged potato chips, but lighter! To make air-fried pasta chips you can use any pasta shape; I chose penne to simulate long fries, but farfalle, mezze maniche and any other shape you can think of will be fine! This recipe is perfect to rescue leftover cooked pasta that may be a bit overcooked — it’s a true anti-waste recipe — and you can season the air-fried pasta chips however you prefer. I added salt, freeze-dried onion and smoked paprika and served them with a light mayonnaise with boiled eggs and yogurt. Let’s head to the kitchen now: to prepare this pasta chips snack you’ll need just a few minutes: cook the pasta slightly overdone, dress it with oil and a little grated cheese if you wish, then bake or, better yet, air-fry it and the dish is ready! Ingredients to make Fried Pasta Snacks
- 9 oz pasta (dry (about 2 cups))
- to taste salt
- to taste extra virgin olive oil
- to taste spices (as desired)
- 1 oz grated Parmesan (or Grana Padano, optional (about 3 tbsp))

Preparation
Cook the pasta in the classic way, boiling it in lightly salted water until it is slightly overcooked. Drain it well and place it in the air fryer basket. Dress it with a few sprays of oil and, if you wish, a handful of grated cheese (I didn’t use any), then cook.
20 minutes at 392°F, or until golden and crispy (but turn/shake halfway through cooking). Season the fried pasta with spices to taste (I used freeze-dried onion and smoked paprika) and a sprinkle of salt and serve.
Storage, notes and variations
To cook the pasta chips in the oven, simply spread the pasta on a baking sheet with space between the pieces, and bake for 25–30 minutes at 392°F or until well golden.
Store the pasta chips in a well-sealed food bag and consume within a few days; in any case they will never be as good as freshly made.
