Ingredients to make ricotta fritters
- 1 1/4 cups ricotta (dry and well drained)
- 3 eggs
- to taste salt
- 1 bunch parsley
- 1 oz grated Parmesan (or Grana)
- to taste extra virgin olive oil

Steps
To make ricotta fritters you must use ricotta that is dry and well drained, otherwise the patties will fall apart during cooking.
Gather the ricotta in a bowl, add pepper, a pinch of salt, the grated cheese and the chopped parsley. Beat with a fork until you obtain a homogeneous mixture.
Heat a pan with a drizzle of oil and spoon the mixture into it, shaping the patties with a spoon. Cook them over medium heat on one side and as soon as they take on color, gently turn them over with a spatula, taking care not to break them.
The ricotta patties are ready, all that’s left is to enjoy them. Store any leftovers in the fridge and consume within 24 hours.
