Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/4 cups Guinness beer
  • 1 1/8 cups packed brown sugar (about 8.8 oz)
  • 7 oz butter (about 7/8 cup (≈ 1 3/4 sticks))
  • 2/3 cup sour cream (or Greek yogurt)
  • 1 cup unsweetened cocoa powder (about 3.5 oz)
  • 2 eggs
  • 1 teaspoon vanilla extract (or sugar)
  • 1 tbsp baking powder
  • 1 cup heavy cream for whipping (about 8.5 fl oz)
  • 2/3 cup mascarpone
  • 2/3 cup cream cheese (type: Philadelphia)
  • 2 tbsp sugar (about 0.9 oz)

Preparation

  • To make the Guinness cake, pour the beer into a saucepan, place over the heat and add the butter. With the heat the alcohol will evaporate and there will be no trace left in the cake; once the butter has melted, add the cocoa and quickly whisk to blend, avoiding lumps. Turn off the heat before the liquid comes to a boil and let it cool slightly.

  • Meanwhile, beat the eggs with the sour cream or yogurt (sour cream can be difficult to find here), add the sugar and mix — a utensil will be enough.

  • Add the cocoa-and-beer mixture and combine, then add the flour. Work with a hand whisk until you obtain a homogeneous batter and finish

  • by adding the baking powder and the vanilla extract. Mix well, pour the batter into a pan lined with baking paper and bake in a conventional oven at 347°F (175°C) for about an hour, or until a skewer inserted into the center comes out dry. Avoid opening the oven door before 45 minutes have passed. Remove the cake from the oven and let it cool a little before removing it from the pan, then place it on a rack and let it cool completely before decorating with the frosting.

  • To make the frosting, whip the cream until it becomes foamy and thick but not stiff, add the mascarpone and continue whipping. Add the cream cheese and the sugar and mix again with the beaters. Once ready, spread it over the cooled cake with a spatula, a spoon or a piping bag.

Storage, notes and tips

Store the chocolate Guinness cake covered in the refrigerator for 3 days. You can replace the frosting with a pastry cream with whipped cream (chantilly).
