Homemade stuffed hamburgers filled with cheese that stay very soft. Stuffed cheese hamburgers are one of the meat main courses most appreciated by my children, especially if accompanied by my very soft homemade hamburger buns. I prepare them with a very simple and special recipe that makes them soft, succulent and tasty, adding to the mix a little cream cheese and finely chopped white onion and often I like to stuff them with a melting cheese. With the addition of white onion (the white onion cooks quickly), the flavor of the burgers becomes really delicious and, by chopping it very finely, it cooks in no time, while the cream cheese in the mixture makes them particularly tender. The burger mixture is different from the classic meatball mixture; in fact it is gluten-free because the hamburgers do not contain bread and it is made without eggs. You can cook the homemade hamburgers in the air fryer, in the oven or in a pan; I prefer the latter method because they turn out juicier. You can therefore serve them with roast potatoes, a salad or whatever your imagination suggests.
To make stuffed meat hamburgers you can use the ground meat you prefer, beef, veal, chicken, turkey and even pork. For stuffing you can similarly use provola, caciotta, scamorza, Gruyère and Asiago; I do not recommend mozzarella unless it is the pizza type, because it would release too much water. Ingredients to make homemade stuffed hamburgers
- 1.32 lb ground beef
- 1/2 cup white onion (finely chopped)
- 3.5 oz cream cheese (spreadable)
- 1.4 oz grated Parmesan (or Grana)
- pepper
- to taste salt
- 9 oz stretchy curd cheese (not mozzarella)

Preparation
For these stuffed burgers I used a suitable mold; I’ve included the link among the tools (above). If you don’t have it, use a 4-inch round cookie cutter.
Put the onion in the blender bowl and chop it very finely; collect it in a bowl together with the grated cheese, salt and pepper. Mix well.
Add the cream cheese, which together with the onion will make them very soft and flavorful. Combine the mixture very well and, using the special mold, start creating the first meat patty disk.
Press with the press that forms the cavity and place the cheese inside; if you don’t have the mold, form a cavity with your hands.
Cover with more mixture and press. Proceed this way for all the burgers and place them between two sheets of parchment paper.
Place the burgers on a preheated grill pan, lower the heat and cook them 3-4 minutes per side to brown the second side as well; raise the heat at the end of cooking. The burgers are ready—bring them to the table and serve them hot.
Storage notes and tips
Store the hamburgers in the refrigerator, wrapped in plastic wrap for up to two days, or freeze them on a tray and then transfer them to food storage bags. Consume within a couple of months and thaw in the refrigerator before cooking.
