Sicilian-style pork loin rolls with eggplant, a version as tasty as the Pork Loin Rolls with Zucchini

A few days ago I bought some pork loin to make the Sicilian-style rolls, the breaded ones placed on skewers — my children adore them and I make them from time to time. I didn’t want to make the classic version with ham and cheese; I was looking for tasty pork loin rolls different from the usual. So, to make a classic recipe a bit different, I decided to add grilled eggplant to the filling so that my pork loin rolls would be even more tender and succulent.

The result was exceptional: the pork loin cooked this way stayed very tender and my children enjoyed them even more than usual, even more than the very tasty pistachio pork loin rolls.

If you’ve never tried the Sicilian breaded rolls, often known as “involtini alla messinese“, I recommend trying this version with grilled eggplant — you’ll see it will be a success!

Ingredients

  • 9 slices pork loin (thin)
  • 1 eggplant
  • to taste black pepper
  • 4 oz provola (sliced)
  • 4 oz cooked ham
  • to taste extra virgin olive oil
  • 1/3 cup grated cheese (Grana or Parmesan)
  • 1 1/4 cups breadcrumbs

  • 1 Bowl
  • 1 Baking tray
  • 3 Skewers
  • Parchment paper

Steps

  • Peel and slice the eggplant, then grill on both sides, seasoning lightly with salt. I use a cast-iron griddle, but a heavy-bottomed pan will work just as well.

    Prepare a bread crumb mixture with the grated cheese and breadcrumbs.

  • Lightly pound the meat with a meat mallet, place it in a bowl, drizzle generously with oil and a sprinkle of pepper, and mix so the slices are well coated.

    Dip the slices in the breadcrumb mixture and press them with your hands so the coating adheres well.

  • Place on each meat slice a slice of eggplant, a slice of cheese and half a slice of cooked ham. Roll tightly to form the rolls.

  • Secure the rolls with a skewer, grouping them in threes (or fours).

    Line a baking tray with parchment paper, drizzle with a little oil, place the skewers on it and bake in a ventilated oven at 356°F for 15-20 minutes. Remove from the oven once you have achieved the desired golden color and serve hot.
