Ingredients to make potato boats with pesto and green beans

  • 4 Ruggiero New Potatoes (Tasty for Oven and Steam)
  • cup (≈3.5 oz) Genovese pesto
  • oz (about 1 1/4 cups) green beans
  • to taste salt
  • to taste pine nuts

Steps to make potato boats with pesto and green beans

To prepare this recipe I recommend cooking the potatoes by steaming; this method will enhance their delicate flavor.

  • Rinse the potatoes, place them whole in a steamer and cook them until they are soft (I cook them in the microwave in the special steamer for 20 minutes at 750W). Once cooked and brought almost to room temperature, cut them in half, but for now do not remove the peel. Make incisions on the sides with a knife and carefully scoop out the flesh with a spoon, let them cool well and only now remove the peels.

    Gather the now-cooled flesh in a bowl; if there are large pieces, chop them into small pieces, add salt, pesto and the green beans, mix and use this mixture to fill the potato boats. Decorate with pine nuts and basil leaves.

    The potato boats are ready to be served; they keep in the fridge for 24 hours if well sealed with plastic wrap or stored in a suitable container.
