Ingredients

  • 7 cups (cubed) pumpkin (butternut, delica or your preferred variety)
  • 1 medium onion (about 4 oz) onion
  • 1/3 cup pistachio crumbs
  • 9 oz burrata
  • to taste salt
  • to taste extra virgin olive oil
  • to taste black pepper

Preparation

I prepared this dish using violina or butternut squash, but you can use the type of pumpkin you prefer.

  • Peel the pumpkin and cut it into small cubes. Peel and chop the onion (or shallot). Place the onion in your pot, let it soften slightly with a good drizzle of oil, then add the pumpkin, season with salt, raise the heat for a few minutes to let it brown and develop flavor. Put on the lid, lower the heat to the minimum and simmer until the pumpkin is cooked through — this should take about 20–30 minutes.

  • Transfer the cooked pumpkin to the blender jug, add the pistachio crumbs and the burrata. Blend until you obtain a creamy mixture and your sauce is ready to use.

Storage and tips

The pumpkin and burrata sauce can be prepared in advance and stored in the refrigerator for 2 days, well sealed in an airtight container.
