To make rice gnocchi in a skillet with vegetables, you can choose fresh gnocchi or dried ones that are already ready to use. If you use dried rice gnocchi, consult the section on how to prepare dried rice gnocchi before proceeding with the recipe.
If you use dried gnocchi, here is how to soak rice gnocchi: after purchasing dried rice gnocchi, rinse them thoroughly under running water, collect them in a bowl and cover them with cold water. Let them rest for 12 hours, drain them, rinse and repeat the soaking for another 12 hours. If at that point they are soft, you can use them; otherwise extend the soaking until they are fully hydrated. Once rehydrated, bring a large pot of lightly salted water to a boil and drop the gnocchi in. As soon as they float to the surface, you can use them and add them directly to the already cooked vegetables.
