Sausage with potatoes, peppers and onions — a perfect combination for a delicious rustic main course: don’t you think? When I prepare it at home it’s always a celebration; both my husband and my children love it, so in summer I often cook it for dinner. I prepare the sausage with peppers and potatoes using the oven, but when it’s particularly hot I prefer to use the air fryer, which I place outdoors on the terrace to avoid heating my kitchen too much. The preparation is almost identical to that used in a conventional oven and the result is just as delicious. Ingredients
- 1 lb 5 oz potatoes
- 28 oz (about 3 large bell peppers) bell peppers
- 3.5 oz (about 1 small onion) onion
- to taste extra virgin olive oil
- to taste roasting seasoning blend (contains salt)

Steps
Peel the potatoes, rinse them, cut them into fairly small chunks and place them in a bowl. Rinse the peppers, remove the stem, seeds and membranes and cut them as well; finally peel and slice the onion. Combine everything in the bowl, add a little oil and the roasting spice mix which already contains salt (alternatively use salt, oregano and black pepper), mix and transfer everything into the air fryer basket. My air fryer is very large (12 liters) and these ingredient quantities are calibrated for my air fryer and suitable for 4 people; if yours is smaller, reduce proportionally.
Cook for about 30 minutes at 392°F (200°C), turning every 15 minutes. When the potatoes and peppers are almost cooked, add the sausage cut into 4-inch pieces and cook for another 15–20 minutes, turning it after the first 8–10 minutes.
If you want to cook in a convection oven, use the same method; for a conventional/static oven, increase the cooking time by 5–10 minutes.
Remove your dish from the oven/air fryer and serve it hot or warm. Store any leftovers in the refrigerator and consume within 24 hours after reheating.
