The ingredients are few: breadcrumbs preferably homemade and made from semolina bread, grated cheese such as Pecorino or caciocavallo, garlic and parsley, but the result is a tasty seasoning to use in a thousand recipes and even in the mixture for grandma’s meatballs. Useful like Panko but much more versatile. Whether it’s cutlets, meatballs or gratinated vegetables, the seasoned breadcrumbs give every dish a simple but unique flavor, letting us bring lots of taste to the table without spending much. Ingredients to make the seasoned breadcrumbs

  • 1 1/3 cups breadcrumbs (about 5.3 oz (150 g))
  • 1 small bunch parsley (small)
  • 1 clove garlic
  • 1/4 cup grated Parmesan (about 4 tablespoons (20 g))
  • 1/4 cup Pecorino Siciliano (Sardinian, Pecorino Romano or aged caciocavallo (about 4 tablespoons / 20 g))
  • to taste salt (if needed)

Preparation

  • To make the seasoned breadcrumbs I suggest using rustic breadcrumbs; you can make them at home starting from stale bread or buy them at the bakery — that’s how we do it. Gather them in the blender jar together with the rest of the ingredients and a pinch of salt if the bread lacks salt, and blend until you obtain a homogeneous mixture. Storage notes and tips

Store the seasoned breadcrumbs in the refrigerator for a couple of days, sealed in an airtight container. Alternatively, place them in the freezer and use as needed; they will stay fresh and fragrant for quite a long time.
