Ingredients to make stewed cod with cherry tomatoes

  • 1.5 lb cod (fresh or 2.2 lb frozen cod)
  • 1 cup cherry tomatoes
  • to taste salt
  • to taste extra virgin olive oil
  • to taste parsley
  • 2 tbsp white wine

Preparation

For this recipe you can use fresh or frozen cod; of course fresh is better. If you use frozen, let the cod thaw slowly in the fridge. Alternatively, use the microwave defrost function, or run each fillet under cold running water for a couple of minutes. The first method is always the most appropriate.

  • Heat a drizzle of oil in a pan with a clove of garlic split in half, add the cherry tomatoes rinsed and cut into 3-4 pieces. Salt so they sweat, then add the cod fillets, raise the heat, pour in the white wine and once it has evaporated lower the heat again. Cook for 20 minutes, then turn off and sprinkle with parsley. The fillets are ready to be enjoyed.

Storage and tips

Cod fillets should be eaten immediately, but if you have leftovers, store them in the fridge in an airtight container for a maximum of 24 hours. Reheat before serving.

For an extra touch of flavor, add about 3 tbsp + 1 tsp of white wine to pour over the cod just placed in the pan and cook.
