Grandma’s apple fritters recipe — or rather my Trentino grandmother’s, who also made a wonderful apple cake and apple desserts. The super quick apple fritters, in batter, soft and indulgent are an economical and wholesome dessert and can be an ideal snack to prepare in just a few minutes. They can also be part of an original breakfast. These little treats are easy to make because the apple fritters recipe is really very quick and requires few ingredients, like apple and jam puff pastries or the apple braid with puff pastry.
I learned the super quick apple fritters recipe from my grandmother Fernanda; when I was a child I loved them and always asked her to make them for me. Grandma was truly unique: in a moment she made the batter, sliced the apples and in 20 minutes the softest apple fritters in the world were already on the plate, fragrant, crispy and ready to be devoured with a dusting of powdered sugar! And yes, I nostalgically remember grandma’s apple snack…

Ingredients
- 4 apples (small or 3 large)
- 1 1/2 cups all-purpose flour (for the batter)
- 2 tbsp + 1 tsp granulated sugar
- 1 egg
- 3/4 cup (about 200 ml) milk
- to taste grated lemon zest
- to taste lemon juice
- to taste vanilla powdered sugar ((or add vanilla sugar to the batter))
- to taste ground cinnamon
- to taste all-purpose flour (for dusting)
- to taste sunflower oil (for frying)
- 1 pinch salt (to add to the batter)

Steps
Peel the apples, remove the cores (use an apple corer or a sharp knife) and cut them into slices about 1/4 inch thick.
Collect the slices in a bowl, sprinkle with grated lemon zest, pour a little lemon juice over them and toss to coat.
Now it’s time to learn how to make the batter for the apple fritters.
Put the flour in a bowl, pour in part of the milk and loosen it to form a smooth mixture,
add the egg, mix it in and then add the sugar and vanilla (or, as I do, a little vanilla sugar),
finish with a teaspoon of cinnamon and the lemon zest. Add the remaining milk, mix and let the batter rest a few minutes before continuing. Start heating the oil, dust the apple slices with flour
and then dip them in the batter, let the excess drip off and plunge them into hot oil (338°F).
Brown them on both sides, remove and place them on kitchen paper to absorb the excess oil.
Transfer them to a plate, dust with powdered sugar and cinnamon and serve — they are best served hot, but are still tasty after a few hours at room temperature.
