Zucchini rolls with Robiola and salmon

Grilled zucchini rolls filled with smoked salmon, Robiola and arugula, an easy, light and tasty appetizer, perfect from Christmas to mid-August and a delicious light main course.

Small, light and irresistible, the grilled zucchini rolls with Robiola and salmon can be an original appetizer for festivities or a light and tasty summer main course, perfect in every season, especially when it gets really hot.

These delicious grilled zucchini rolls can be prepared in advance, stored in the fridge for a few hours and brought to the table when convenient. The recipe is really very simple, but so good that once you try them they will become one of your favorite summer dishes. Don’t believe it?

Ingredients

  • 2 zucchini (large, green)
  • 3 oz (≈1/3 cup) Robiola
  • to taste arugula
  • 7 oz smoked salmon
  • to taste extra virgin olive oil
  • 1 pinch salt

Tools

  • 1 Cutting board
  • 1 Knife sharp
  • 1 Pan grill pan

Steps

  • Rinse the zucchini and remove the ends. With a sharp knife and steady hand, cut slices about 1/8–3/16 inch thick.

    Heat a grill pan very well. Once it’s smoking hot, place the zucchini slices and cook 5–6 minutes per side. Salt lightly, then stack them on a plate, one on top of another, and keep warm.

  • When done grilling, lay the slices out and fill them with smoked salmon, Robiola and arugula. Roll them up tightly and place on a plate, finish with a drizzle of oil and serve.

    You can enjoy this dish at room temperature or chilled straight from the fridge. If you want to store it in the fridge for a few hours, remember to cover the plate with plastic wrap.
