Zucchini Rolls with Robiola and Speck

Grilled zucchini rolls stuffed and served cold, an easy, indulgent and tasty appetizer perfect any time of year, from Christmas to mid-August!

Grilled zucchini rolls with robiola, speck and arugula are a light main course ideal for hot days, but also a tasty and appealing appetizer. These grilled zucchini rolls can be enjoyed cold or at room temperature, can be made ahead of when they will be eaten and are perfect after a long day at work or a fun morning at the beach.

Zucchini and robiola rolls with speck and arugula can be prepared in the morning, during the cooler hours of the day and stored in the fridge for a few hours or until ready to serve. For the filling I chose robiola, a fresh cheese with a very delicate flavor, speck and arugula, but you can vary the filling to your taste. I also made them with salmon and they are really delicious!

Ingredients

  • 2 zucchini (large)
  • 3 oz robiola
  • 5.3 oz speck
  • to taste arugula
  • to taste extra virgin olive oil

Tools

  • 1 Grill pan for grilling
  • 1 Cutting board plate
  • 1 Knife

Steps

  • Rinse the zucchini and trim the ends; with a sharp knife and a steady hand, cut slices about 1/8–5/32 inch thick.

    Heat a grill pan very well; when it’s smoking hot place the zucchini slices on it and cook 5–6 minutes per side, salt lightly, then stack them on a plate one on top of another and keep warm.

  • After grilling, place the slices on a work surface and fill with speck or prosciutto crudo, robiola and arugula. Roll them up tightly and arrange on a plate, drizzle with a little olive oil and serve.

    You can enjoy this dish either at room temperature or chilled straight from the fridge. If you want to store it in the refrigerator for a few hours, remember to cover the plate with plastic wrap.
