How to Prepare Roasted Fennel in the Air Fryer

  • To prepare fennel in the air fryer, start by washing and drying the fennel. Remove the stalks – you can use them for a soup or a salad – and slice the fennel thinly (about 1/8 inch) (1). With a knife, remove the core from the central slices (2). In an espresso cup or small glass, pour the oil; add a pinch of salt, a grind of pepper, and the oregano. Emulsify everything energetically using a fork (3).

  • Line the basket of the air fryer with the appropriate parchment paper. Arrange the fennel slices side by side without overlapping them (4) (or just slightly overlapping if they don’t fit in a single layer). With a kitchen brush brush the oil emulsion onto the fennel slices (5). If you have some left over, you can use it to season the fennel once cooked. Cook the fennel in the air fryer at 356°F (no need to preheat it) for 8-10 minutes, until golden (6).

  • Remove them from the air fryer, arrange them on a tray, and season with the remaining emulsion or a drizzle of raw oil. You can serve them either hot or at room temperature.

You can store the fennel cooked this way in the refrigerator, in a glass container, for about 3 days.

  • If I don’t have an air fryer, can I use the oven?

    Yes, arrange the fennel slices on a baking sheet lined with parchment paper, brush them with the emulsion, and bake them in a fan oven at 392°F for about 30 minutes.
