How to Prepare Roasted Fennel in the Air Fryer
To prepare the fennel in the air fryer, start by washing and drying the fennel. Remove the stalks – you can use them for a soup or salad – and slice the fennel fairly thinly (about 1/8 inch) (1). Use a knife to remove the core from the central slices (2). In a small cup or shot glass, pour the oil; add a pinch of salt, a grind of pepper, and the oregano. Vigorously whisk it all together using a fork (3).
Line the basket of the air fryer with the appropriate parchment paper. Arrange the fennel slices next to each other without overlapping them (4) (or just slightly overlapping, if they don’t fit in one layer). Use a kitchen brush to brush the oil emulsion over the fennel slices (5). If you have any left over, you can use it to dress the fennel once cooked. Cook the fennel in the air fryer at 356°F (no need to preheat it) for 8-10 minutes, until they are golden (6).
Remove them from the air fryer, place them on a tray, and dress them with the remaining emulsion or a drizzle of raw oil. You can serve them either hot or at room temperature.
Storage
You can store the fennel cooked this way in the refrigerator, in a glass container, for about 3 days.
