  • 28 oz potatoes
  • 2 tbsps extra virgin olive oil
  • 3 pinches salt
  • to taste pepper
  • 1 sprig rosemary

How to Cook Roasted Potatoes in Air Fryer

  • To prepare crispy roasted potatoes in the air fryer, start by peeling the potatoes. Then cut them into wedges (1). I recommend not making them too thick; I got 6-8 wedges from each potato (2). Once cut, place them in a colander and rinse thoroughly under running water (3). This step helps to remove starch and makes the potatoes crispier.

  • Drain them well and lay them on a clean tea towel. Dry them carefully (4). Transfer them to a bowl and season with 3 pinches of salt, a grind of pepper, and the chopped rosemary. Add 2 tablespoons of oil (5). Mix thoroughly with your hands to distribute the seasoning evenly (6).

  • Line the basket of the parchment paper. Arrange the potatoes in the basket, trying not to overlap them too much (7). Cook the roasted potatoes in the air fryer at 392°F for 20-25 minutes, depending on the size of the potato wedges. Halfway through cooking, quickly open the air fryer and stir with a spoon (8). At the end of cooking, the roasted potatoes will be nicely golden on the outside and soft inside (9).

Storage

If any are left over, you can store the roasted potatoes in the refrigerator for one day. You can then reheat them briefly in the air fryer at 392°F for a few minutes.

Tips and Variations

You can reduce cooking time by cutting the potatoes into smaller cubes, but do not overdo it: the air fryer tends to dry out food, and the smaller the vegetables, the more they risk burning.
