Cooking air fryer roasted tomatoes is a practical and quick way to prepare a really tasty summer side dish. A simple recipe that instantly calls for a slice of good bread for dipping!
During the summer, tomatoes are at their sweetest and juiciest: perfect to enjoy raw in salads, but also ideal when cooked and seasoned with aromatic herbs.
To prepare roasted tomatoes, you can use a traditional oven, cook them in a pan or — as I show in this recipe — cook them in an air fryer, an alternative cooking method highly recommended for vegetables (eggplants, peppers, fennel…). In a few minutes, you’ll get perfectly roasted tomatoes, slightly caramelized on the surface, without turning on the oven and without sweating over the stove.
Air fryer roasted tomatoes are great served at room temperature and lend themselves to many variations. I flavored them with mint, oregano, and basil, but you can also add parsley, marjoram, thyme, or a clove of minced garlic for a more intense flavor.

- 28 oz round tomatoes
- 1 pinch salt
- 1 dash extra virgin olive oil
- 1 pinch dried oregano
- 1 pinch dried mint

How to Cook Roasted Tomatoes in the Air Fryer
To prepare the air fryer roasted tomatoes, start by washing and drying the tomatoes, then cut them in half (1). Season them with a good pinch of salt, some oregano, and some mint (2). I prefer to add fresh basil raw at the end of cooking to avoid it burning and changing flavor.
Line the basket of the air fryer with the appropriate paper, and then arrange the tomatoes cut side up. Drizzle with a dash of extra virgin olive oil (3). If you have an oil sprayer, you can use it to season the tomatoes evenly with less oil.
Cook the tomatoes in the air fryer at 356°F for about 20 minutes, without turning them halfway. When they are soft and slightly caramelized on the surface (4), they are ready. Remove them from the air fryer and transfer to a plate, then garnish with chopped fresh basil (5).
Allow the roasted tomatoes to cool completely before serving. They make a great side dish for meat or fish mains, but can also be a tasty cold appetizer.
Storage
You can store roasted tomatoes in the refrigerator for 2 or 3 days.
Tips and Variations
Since the air fryer tends to burn the more delicate aromatic herbs, if you use fresh ones, it might be better to add them at the end of cooking, as I did with the basil.
If you want to add garlic to enhance the flavor of the roasted tomatoes, I suggest using 3 or 4 cloves: peel them, halve them, and remove the core. Cut them into large pieces and place one or two on top of each tomato, so you can easily find and remove them after cooking.
