Burrito with Chicken and Guacamole

The burrito with chicken and guacamole is a typical dish of Mexican cuisine, consisting of a soft flatbread, the tortilla, wrapped like a package and filled with chicken strips, guacamole sauce, and many other tasty ingredients. I, for example, in addition to the chicken flavored with spices and lime and the classic guacamole, added some fresh tomatoes, a bit of boiled beans, and sour cream, a very common ingredient in Tex-Mex dishes. If you wish, you could garnish your chicken burritos with some grated cheddar cheese, a bit of spicy tomato sauce, boiled Mexican rice or fresh salad.
The burrito with chicken and guacamole can be considered a main course, since it contains both meat and legumes and vegetables, but it is often served as a second course, accompanied by salad, French fries, or classic nachos. Ingredients for 4 Mexican burritos

I prepared the gluten-free burritos using these homemade tortillas; regarding the other ingredients, pay attention to the sour cream: if you use the packaged one and it contains only cream and lactic ferments, it is suitable for consumption by those with celiac disease, but if it contains other ingredients, it must have the “gluten-free” label.

  • 4 tortillas (of 9 inches in diameter)
  • 1.5 lbs chicken breast (sliced)
  • 1 cup canned red beans
  • 2 salad tomatoes
  • 5 oz sour cream
  • 1 pinch salt
  • 1 avocado (ripe)
  • 1.5 oz cherry tomatoes
  • 1/4 red onion
  • 2 tbsps extra virgin olive oil
  • 1 pinch cumin
  • 1/2 lime (juice only)
  • 1 pinch salt
  • 1 pinch pepper
  • 1 clove garlic
  • 4 tbsps extra virgin olive oil
  • 1 hot chili pepper
  • 1/2 tsp ground cumin
  • 1 pinch pepper
  • 2 limes (juice only)

How to prepare the Mexican burrito with chicken and guacamole at home

  • To prepare the burritos with chicken and guacamole, start by preparing the sour cream (if you don’t buy it ready-made, find the recipe here) and the guacamole, whose recipe you can find here (1).

  • Drain the beans, rinse them under water, and season them with salt and oil (2). Once these ingredients are ready, store them in the refrigerator and proceed with the chicken preparation. Clean the chicken breast and cut it into strips (3).

  • Place it in a bowl with the peeled garlic, chopped chili pepper, cumin, oil, pepper, and lime juice (4). Mix well and let marinate in the refrigerator for at least 30 minutes, longer if you have time.

  • After the marinating time, heat a large pan over the stove without any other seasoning, and when it is hot, pour in the chicken along with its marinade (5). Salt and cook the chicken over high heat for about 10 minutes (6), turning it often. Cooking times depend a lot on the thickness of the chicken.

  • Check the cooking and turn off the heat (7). While the chicken is cooking, wash the tomatoes and cut them into thin slices. Then proceed to assemble your burritos with chicken and guacamole: slightly heat the tortillas on a non-stick pan for a few seconds.

  • Then place each tortilla on a sheet of foil large enough to contain it (8). Place some tomato slices on it (9).

  • Add then some chicken strips (10), some beans and a few teaspoons of guacamole (11). Complete everything with some sour cream (12).

  • Now the most fun part, closing the burrito! It’s not as difficult as it seems, below you can see an explanatory video (the ingredients are a bit different but the method is the same). With two hands, fold the right and left ends of the tortilla toward the center (13). (In the photo, I used only one hand, but because with the other I was taking the picture 😀 )

  • Then, holding these two ends closed with one hand, with the other hand fold the bottom flap of the burrito up (14), slightly squeezing to wrap all the filling inside. Finally, tightly seal the top part (15), the slightly sticky filling will help you with this task.

  • Once your burritos with chicken and guacamole are ready, serve them still wrapped in the foil. They can be enjoyed unwrapping them from one end, or cutting them in half.

How to store burritos

If burritos with chicken and guacamole are not consumed immediately, they must be stored in the refrigerator at most until the next day.

Tips and variations

You can add to your chicken burritos some shredded lettuce, grated cheddar cheese, or thinly sliced red onion. If you don’t feel like making guacamole, you can simply use avocado slices.
