Ingredients for 1 chia seed pudding cup with yogurt and strawberries

If you are celiac, chia seeds are naturally gluten-free and do not need the ‘gluten-free’ label on the package, as long as they are not mixed with other ingredients.

  • 0.7 oz chia seeds
  • 0.5 cup low-fat yogurt (or plant-based yogurt)
  • 5.3 oz strawberries
  • A few drops maple syrup

How to prepare overnight chia yogurt and strawberry pudding

  • To prepare the chia yogurt and strawberry pudding, start the night before: to achieve the right consistency, the chia seeds need to rest overnight. In a glass container, mix the low-fat yogurt and chia seeds (1). Cover the container and place it in the refrigerator. The next morning, the seeds will have absorbed the liquid, creating a dense pudding-like texture (2). Wash the strawberries, dry them, remove the stems, and cut them into pieces (3).

  • In a cup, pour about half of the chia seed pudding, spreading it evenly on the bottom (4). Cover with about half of the strawberry pieces (5) and sweeten everything with a few drops of maple syrup (6).

Storage

It is better to store the chia yogurt pudding separately (which keeps in the fridge for 2 days) and the chopped strawberries.

Tips and Variations

If you prefer, instead of pouring maple syrup on strawberries, you can sweeten the pudding by adding the syrup to the yogurt the night before and mixing well. If you don’t like maple syrup, you can replace it with honey or agave syrup.
