Homemade Nutella Ice Cream

Refreshing, creamy, and unmistakably flavorful, the homemade Nutella ice cream is the ideal dessert to serve at the end of a meal or as a snack, especially during these hot summer days. If you have an ice cream maker at home, among the many flavors of homemade ice cream you can experiment with, Nutella is certainly a favorite among the little ones: and, moreover, it’s one of those that turn out well even without using the ‘technical’ ingredients often used for artisanal ice cream (dextrose, maltodextrin, locust bean gum flour, etc.) that are not always easy to find. To prepare homemade Nutella ice cream, you will need few and common ingredients: milk, cream, Nutella, and a little sugar (Nutella already contains a lot). You just need to mix everything well with an immersion blender, pour it into the ice cream maker and let it work for 35-40 minutes, and your Nutella ice cream will be ready to enjoy!

Ingredients for about 600 g of Homemade Nutella Ice Cream

  • 3/4 cup fresh liquid cream (unsweetened)
  • 3/4 cup whole milk
  • 7 oz Nutella®
  • 2 tbsp sugar

  • 1 Container tall and narrow
  • 1 Immersion Blender
  • 1 Ice Cream Maker

How to Make Homemade Nutella Ice Cream with an Ice Cream Maker

  • To make homemade Nutella ice cream, start by putting the milk and sugar in a small pot. Place the pot on the stove and heat the milk until the sugar is completely dissolved (1). The milk should not boil. Let it cool. Then pour the cream into a tall and narrow container (the one that comes with the immersion blender works great) and add the Nutella (2).

  • Blend with the immersion blender to mix well (3). Then pour the milk in which you dissolved the sugar into the container (4).

    b. blend Nutella and cream with the immersion blender to make the ice cream mixture
  • Continue blending for a minute or two, until you obtain a perfectly smooth and homogeneous mixture (5). Cool it in the refrigerator for at least an hour, especially if you are using a non-self-refrigerating ice cream maker, i.e., one with a bowl that needs to be placed in the freezer the night before. When the mixture is cold, pour it into the bowl of the ice cream maker (6).

    c. add the sweetened milk to the cream and Nutella mixture
  • Let it work for 35-40 minutes (7), until the ice cream has a solid consistency and sticks to the ice cream maker’s paddles (8).

    d. let the ice cream maker work for about 40 minutes
  • You can serve the Nutella ice cream immediately, garnished if desired with some chopped hazelnuts or a dollop of whipped cream.

Storage

You can store homemade Nutella ice cream in the freezer, in a steel or plastic container, for about 1 month. Like all ice cream – homemade or not – it tends to harden after just a few hours because the temperature of freezers is much lower than the ideal temperature for ice cream. Just take it out of the freezer 10-15 minutes before serving to soften it.

Tips and Variations

I use a self-refrigerating ice cream maker (with a compressor), which is more powerful and efficient, and is less affected by external temperature. Non-compressor ice cream makers, on the other hand, typically have a bowl that needs to be kept in the freezer for several hours; but when it’s very hot, the liquid in the bowl that is supposed to cool the ice cream tends to thaw much before the ice cream is ready; hence it is crucial to cool the ice cream mixture very well in the refrigerator, even overnight if you have time.
