To celebrate March 8, International Women’s Day, this year I suggest mimosa pasta, a creamy and colorful first course perfect for Women’s Day. It’s an easy and quick recipe, ideal if you’re looking for a tasty yet simple idea for a themed lunch or dinner. With its delicate flavor and unmistakable yellow color (here given by saffron), it’s one of those spring dishes that immediately bring cheer to the table.
The mimosa pasta recipe isn’t unique or codified: there are different variations, but in all of them the yellow color predominates (here provided by saffron) and the distinctive element is the crumbled hard-boiled egg yolk on the finished plate, which recalls the small mimosa flowers. Just like in mimosa eggs and in mimosa risotto, the visual effect is an integral part of the dish.
For my version I chose to prepare a creamy mimosa pasta with zucchini cut into thin sticks and quickly sautéed in a pan, which resemble the plant’s small branches and add a fresh, light note. The base is a spreadable cheese cream, velvety but not heavy, which coats the pasta in a balanced way and makes the dish suitable for the whole family.
If you’re thinking of a small menu for Women’s Day, mimosa pasta is a simple yet impressive solution. To stay on theme you can finish with a dedicated dessert, such as pineapple mimosa cake, the strawberry version or the quick and handy mimosa limoncello truffles. A tasty, seasonal idea to celebrate March 8 with color and lightness.
